Rebel Thumb Honey™
Made from Wildflower "Raw" Honey
Wildflower "raw" honey is NOT pasteurized, so its natural enzymes, antioxidants, and pollen are retained.
Better Preservation
We use dark amber honey jars to protect and preserve the quality of our honey as light-especially UV rays- breaks down enzymes antioxidants, flavor compounds, and aromas of honey. Light degrades the quality and natural properties of honey.
Rich Flavors Due to Flavor Infusion Process
Our slow infusion process creates an homogenized honey with robust, evenly distributed layered profiles that are intoxicating with a well-balanced richness for buttery, caramel undertones to a deep smokey flavor.

FAQ About Rebel Thumb Honey™
What is the difference between wildflower "raw" honey vs. regular honey?
- "Raw" means the honey has not been heated using high heat. From here, the differences are between strained, unfiltered or filtered which comes down to how much solid material is removed.
- Raw Strained honey is poured through a coarse mesh or strainer to remove large pieces of wax, bee parts, or hive debris but is smooth and clean-looking.
- Raw Filtered honey is run through a fine filter or cloth (finer than a strainer) which removes smaller pieces of wax, bee parts, or hive debris and is much clearer with an even smoother appearance. The texture is liquid and golden, with less cloudiness.
- Raw Unfiltered is the least processed but may contain large pieces of wax, bee parts, or hive debris and is cloudier and thicker, and often has a very strong, robust flavor.
What does "infused" flavor mean?
- Our "slow and low" proprietary controlled thermal environment promotes the extraction of vanillin and other flavor-active compounds from whole certified organic Madagascar Vanilla Beans (the caviar and pods) at a very low temperature.
- Our slow infusion process creates an homogenized honey with robust, evenly distributed layered profiles that are intoxicating with a well-balanced richness with buttery, caramel undertones to a deep smokey flavor.
- Our Vanilla Vice honey contains naturally occurring specks of vanilla that are observable with the naked eye - analogous to the flecks seen in premium vanilla ice cream made with vanilla beans.
- Our Lavender Haze Honey is infused with culinary lavender flowers - not flavor extracts.
Where is the honey made?
We purchase the artisan honey from a local farm in California and then we do the flavor infusion process here in Morgan Hill, CA.
Why are the honey jars a dark color?
The honey is packaged in a darker color jar to preserve them from the light. When honey is exposed to light, it can degrade the quality and its natural properties.
Why does it look like there's a layer of foam at the top of the jar?
Don't be surprised by a little honey foam on top – it's perfectly normal and absolutely delicious, whether savored on its own or blended in.
Do I need to store my honey in the fridge?
You can but its not necessary.
- Store raw honey in a cool, dry, dark place in your pantry such as a cabinet
- Honey stores best between 60 to 80 degrees Farenheit
- Keep it away from direct sunlight as heat can destroy nutrients
- Use a clean, dry spoon or dipper to serve the honey and close lid properly after each use
How long does infused honey last?
Unopened infused honeys can be stored up to 3 months. Store in a cool, dry place, away from direct sunlight. Once the jar is opened, consume within 10 days to enjoy flavors at their peak. Some flavors can become less intense with time. Remember to stir infused honeys and to use a clean, dry spoon or honey dipper. Close jar properly to store.
My honey solidified. What can I do?
It’s normal for raw honey to crystallize. You can fix it by placing the jar of honey in a pot of warm water, and stirring the honey on low to medium heat until the crystals dissolve.
